Healthy Halloween Recipe : Squid Ink Pasta Salad!
This is an update to my previous Healthy Halloween Recipe: Healthy Halloween Pasta Salad.
I used food coloring (a LOT of food coloring) on those noodles, and I’ve been dying to try this with squid ink pasta instead! I try to limit the amount of artificial colors and flavors the kids get. The very black noodles made with squid ink are a fun treat at our house. Another change I made was to use cucumber this time, instead of zucchini, for the jack-o-lantern faces. I knew the kids would prefer the taste of the cucumber, but the firm zucchini made cuter faces. Although, I thought the cucumber seeds gave a bit of a ‘freckled-nose’ look.

I think this would work well, and give the salad a Tim Burton feel.
I used a spaghetti noodle, and it was very tasty! The squid ink mostly just adds color, and maybe a little bit of a salty flavor, but not much.
Cook up your noodles, according to the package directions.
Drain, then toss the noodles in salad dressing so they don’t stick together.
Allow to cool.
While the noodles are cooling, cut cucumber or zucchini into disks.
Next, with a sharp knife, cut little faces into the disks… soooo cute!
Once the noodles cool, stir in your veggie ingredients.
I tried to stick to orange, purple, and green for the veg.
Now that I’m seeing my previous photo, I’m thinking that cutting the cheese into cubes looked better than shredding it. Orange cheese looks better, but I was trying to avoid unnatural color so I used the raw cheddar we love.
For dressing I wanted to use our favorite vinaigrette, from Braggs. Check with your local health food store to find it. If not, it’s available HERE on Amazon.
After getting all the ingredients combined, add a little more dressing (to taste), then top with the cute jack-o-lantern faces.
It was a huge hit! Can’t wait to make it again.
