Hiding Vegetables In The Main Course
I’m busy. I imagine you are too. It’s crazy trying to work from home with two little boys! So, I’ve got a little trick for saving a few minutes by creating a meal with the veggies hidden in the main course. Then I don’t have to think about veggie sides (that they may or may not eat) and spend time cooking another course! WIN FOR MAMA!
Here’s how I sneak cauliflower into my kids’ favorite dish
Cauliflower Mac-n-Cheese.. or as my kids call it “Macky-Cheese”
Start out by getting some cauliflower chopped into bit size chunks, then put it on the cooktop to steam.
(I put it on Low, rather than Simmer, so it will be ready when the mac-n-chesse done.)
How much you use should be determined by how much mac-n-cheese you’re making. Use enough cauliflower to have 1 veggie serving per mac-n-cheese serving.
You may want to start out conservatively and build up as your kids get used to the taste.. so maybe 1/2 a serving to start.
While the cauliflower is steaming, start making the mac-n-cheese.
Once the cauliflower is nice and tender, mash with a fork or blend with a stick blender.
Finish up with the mac-n-cheese then gently stir the cauliflower into it.
Once combined then serve it up!
